  • 2 chicken breasts (thinly sliced)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 onion (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper (to taste)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce

Instructions

  1. Spiralize the zucchini into noodles and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and onion; sauté until fragrant.
  3. Add thinly sliced chicken, seasoning with salt, pepper, and crushed red pepper flakes. Cook until golden brown and cooked through.
  4. Toss in the sliced red bell pepper and cook for another couple of minutes.
  5. Reduce heat to medium, add zucchini noodles along with soy sauce and oyster sauce, stirring well until noodles are tender (about 3-4 minutes).
  6. Serve hot, garnished with freshly chopped parsley.
