  • 1.2 kg Sweet Potatoes
  • 6 tbsp Unsalted Butter, melted
  • 3 large cloves Garlic, finely grated
  • 1 tbsp Fresh Rosemary, finely diced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan cheese

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel sweet potatoes and slice into uniform rounds (about 3mm thick).
  3. In a bowl, mix melted butter with garlic, rosemary, salt, and pepper. Toss sweet potato slices until coated.
  4. Layer the potato slices in a muffin tray, stacking them tightly.
  5. Cover with foil and bake for 35 minutes. Remove foil and increase temperature to 200°C (400°F), baking for an additional 15 minutes until golden.
  6. Carefully scoop out stacks when done and drizzle with remaining butter.
