  • 1 pound wild-caught large shrimp (peeled, deveined)
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon red pepper flakes
  • 4 tablespoons butter
  • 1/3 cup white grape juice or chicken stock
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced parsley

Instructions

  1. Prep the shrimp by thawing if frozen, then peeling and deveining them.
  2. Marinate shrimp with 2 tablespoons olive oil, half the garlic, salt, and red pepper flakes for 20 minutes.
  3. Heat remaining olive oil in a skillet over medium heat; cook shrimp until opaque (about 1-1½ minutes per side).
  4. Remove shrimp and in the same skillet, melt butter and sauté remaining garlic for 30 seconds. Add grape juice (or stock) and lemon juice; simmer until slightly thickened.
  5. Return shrimp to the skillet, mix with sauce, and garnish with parsley before serving.
