  • 2 zucchini (medium, sliced)
  • 1.5 cups corn kernels (cooked)
  • 4 tablespoons butter (divided)
  • Fresh lime juice
  • Fresh cilantro (chopped)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté zucchini with a pinch of salt and pepper until tender yet crisp (about 5 minutes).
  2. Push zucchini to one side of the pan. Add chicken breasts, seasoning with smoked paprika, chili powder, salt, and freshly ground black pepper. Cook until golden brown on both sides (about 5-7 minutes).
  3. Add minced garlic to the skillet and cook for about 30 seconds until fragrant. Stir in cooked corn kernels.
  4. Reduce heat slightly; add butter and fresh lime juice, stirring until the butter melts into a sauce. Sprinkle chopped cilantro before serving.
