  • 8 sheets of rice paper
  • Handful of fresh mint leaves
  • Handful of strawberries
  • 2 kiwis
  • 1 apple
  • 1 mango
  • 1/2 block cream cheese (about 4 oz), softened
  • 1 cup heavy cream (125g), chilled
  • Juice of 1/2 lime
  • 12 tbsp honey

Instructions

  1. Chop the strawberries, kiwis, apple, and mango into thin strips.
  2. Fill a large shallow dish with warm water. Dip one rice paper sheet at a time until pliable (about 5 seconds), then lay it flat on a clean surface.
  3. Place a small handful of fruit and some mint leaves in the center of the rice paper.
  4. Fold in the sides and roll from the bottom up to seal the filling inside.
  5. Repeat until all ingredients are used.
  6. In a mixing bowl, whip the heavy cream until soft peaks form. Fold in softened cream cheese, lime juice, and honey until well combined.
  7. Chill the rolls for at least 15 minutes before serving with the dip.
