  • 1 pint buttermilk
  • ¾ cup all-purpose flour
  • ¾ cup panko bread crumbs
  • 1 egg
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 4 cups baby arugula
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice

Instructions

  1. Marinate chicken breasts in buttermilk for at least 30 minutes.
  2. Prepare coating by mixing flour, salt, garlic powder, and pepper in one bowl. In another bowl, beat the egg.
