- 1 pint buttermilk
- ¾ cup all-purpose flour
- ¾ cup panko bread crumbs
- 1 egg
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon pepper
- 4 cups baby arugula
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Marinate chicken breasts in buttermilk for at least 30 minutes.
