  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Pâte Sucrée dough, divide into 12 portions, and press into tartlet pans.
  2. Freeze tartlet shells for 15-30 minutes to prevent shrinkage.
  3. Preheat oven to 375°F.
  4. Bake the shells for 10-15 minutes until golden brown; cool completely.
  5. Cook chopped strawberries and sugar over medium heat in a saucepan until soft and syrupy; simmer until thickened.
  6. For the pastry cream, combine sweetened condensed milk, whole milk, and heavy cream in a saucepan; temper egg yolks with cornstarch before mixing back in; stir constantly until thickened.
  7. Chill the pastry cream for at least two hours.
  8. Assemble tartlets by spreading a layer of strawberry jam in each shell and piping chilled pastry cream on top.
  9. Garnish with fresh strawberry halves before serving.
