  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth (or vegetable broth for a vegetarian version)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • Fresh thyme sprigs (for garnish)
  • Extra Parmesan cheese (for garnish)
  • Crispy fried onions (optional, for garnish)

Instructions

  1. Sauté sliced onions in melted butter and olive oil over medium heat until golden brown (about 20 minutes). Add optional sugar, garlic powder, thyme, and broth; simmer briefly.
  2. Grease a baking dish and layer half of the potato slices at the bottom. Season lightly with salt and pepper before adding half of the caramelized onion mixture on top.
  3. Repeat layering with remaining potatoes and onions. Pour heavy cream evenly over the top.
  4. Sprinkle Gruyère and Parmesan cheese generously on top.
  5. Cover with foil and bake at 375°F (190°C) for about 45 minutes, removing foil halfway through to brown the cheese.
