  • 2 tablespoons olive oil
  • 1 pound beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 slices of French bread
  • 1 cup shredded Swiss or Gruyère cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Season beef short ribs with salt and pepper. Sear until browned on all sides, about 4-5 minutes per side. Remove from pot and set aside.
  2. In the same pot, add sliced onions and cook slowly until caramelized, about 15-20 minutes.
  3. Stir in minced garlic and cook for an additional minute. Return seared ribs to the pot.
  4. Add beef broth, balsamic vinegar, thyme, bay leaf, and season with salt and pepper. Bring to a boil then reduce heat to low. Cover and simmer for 1.5 to 2 hours until ribs are tender.
  5. Preheat oven broiler. Toast bread slices until crispy.
  6. Remove ribs from the soup, shred meat off bones and return to the pot.
  7. Ladle soup into oven-safe bowls, top with toasted bread slices and cheese, then broil until cheese is melted and golden brown.
