  • 0.25 cup chopped turkey slices
  • 1 teaspoon chopped fresh tarragon
  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 cup low-sodium chicken broth
  • 1 pound asparagus, trimmed and cut into pieces
  • 0.5 cup peas
  • 2 spring onions, sliced
  • 0.25 cup half-and-half
  • 2 tablespoons extra-virgin olive oil
  • 0.25 teaspoon salt, divided
  • 0.25 teaspoon ground pepper, divided
  • 1 tablespoon plus 1 teaspoon cornstarch, divided

Instructions

  1. Preheat your skillet over medium heat with olive oil.
  2. In a bowl, mix fontina cheese, turkey slices, and tarragon until well combined.
  3. Butterfly each chicken breast and fill with the cheese mixture; seal with toothpicks if needed.
  4. Season the outside of the chicken breasts with salt and pepper.
  5. Sear the stuffed chicken in the skillet for approximately 6 minutes per side until golden brown.
  6. Add low-sodium chicken broth to the pan; cover and simmer for about 12 minutes until cooked through (165°F internal temperature).
  7. In the same pan, add asparagus, peas, and spring onions; cook for another 4 minutes until tender.
  8. Whisk together half-and-half and cornstarch; stir into the vegetable mixture to create a creamy sauce.
  9. Serve the stuffed chicken alongside vegetables and drizzle sauce on top.
