  • 3 medium zucchinis
  • 1 cup crumbled feta cheese
  • ½ cup strained Greek yogurt
  • 1 medium spring onion
  • ½ cup grated Gruyere cheese
  • Zest of ½ lemon
  • 1 teaspoon garlic powder
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon olive oil
  • ⅓ teaspoon dried oregano

Instructions

  1. Preheat the oven to 200°C / 390°F.
  2. Halve the zucchinis lengthwise and scoop out some flesh to create space for stuffing.
  3. In a bowl, mix together feta cheese, Greek yogurt, chopped spring onion, Gruyere cheese, lemon zest, garlic powder, parsley, olive oil, and oregano until well combined.
  4. Stuff each zucchini half generously with the filling and drizzle with olive oil.
  5. Place on a baking sheet and bake for about 45 minutes until tender and golden brown.
