  • 2 tablespoons cherry juice (optional)
  • 1/2 cup heavy cream (for ganache)
  • 4 ounces dark or semi-sweet chocolate, chopped
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, beat the eggs and sugar until light and fluffy.
  3. Sift together the flour, cocoa powder, baking powder, and salt; then gently fold into the egg mixture.
  4. Spread the batter evenly in the prepared pan and bake for about 10 minutes.
  5. Once baked, roll the cake in a kitchen towel dusted with powdered sugar while still warm; let it cool completely.
