  • 12 to 18 pound turkey (fully thawed)
  • 1 onion (peeled and quartered)
  • 1 lemon (quartered)
  • Fresh rosemary, thyme, and sage
  • Kosher salt and black pepper
  • ¾ cup unsalted butter (room temperature)
  • 6 cloves garlic (minced)
  • 3 celery ribs (roughly chopped)
  • 2 carrots (roughly chopped)

Instructions

  1. Bring the turkey to room temperature by taking it out of the fridge an hour before roasting.
  2. Preheat your oven to 325°F (160°C). Pat dry the turkey and season the cavity with salt and pepper.
  3. Fill the cavity with quartered onion, lemon, and fresh herbs.
  4. Mix softened butter with minced garlic, salt, pepper, and chopped herbs in a small bowl.
  5. Gently loosen the skin over the breasts and rub one-third of the herb butter underneath; then apply the rest on the outside.
  6. Place on a roasting rack or atop chopped vegetables in a pan.
  7. Roast for about 15 minutes per pound until the internal temperature reaches 158°-160°F; it will rise to 165°F while resting.
  8. Allow to rest for at least 30 minutes before carving.
