  • 1 tbsp coconut oil
  • 3 chicken breasts
  • 1 tsp salt & pepper
  • 1 tsp chili powder
  • 3 garlic cloves
  • 1 tbsp minced ginger
  • 1 red bell pepper
  • 3 heaping tbsp Thai red curry paste
  • 1 tsp brown sugar
  • 1 can coconut milk (400ml)
  • 3 bok choy
  • Salt & pepper to taste
  • Pinch red pepper flakes
  • 1 lime juiced
  • Handful cilantro
  • Rice (for serving)

Instructions

  1. Cook rice according to package instructions.
  2. Slice chicken breasts into thin cutlets and season with salt, pepper, and chili powder.
  3. In a pan over medium heat, melt coconut oil and sauté the chicken until golden brown. Remove from the pan.
  4. Sauté minced garlic, ginger, and sliced bell pepper in the same pan until softened.
  5. Stir in red curry paste and brown sugar; cook for 1–2 minutes.
  6. Pour in coconut milk and stir well; bring to a gentle simmer.
  7. Add bok choy; cook until tender but bright green.
  8. Season with salt, pepper, and red pepper flakes; finish with lime juice.
  9. Serve over rice garnished with fresh cilantro.
