1.5 pounds boneless, skinless chicken breasts
8 ounces fresh mozzarella cheese
1.5 pounds ripe tomatoes
1 cup fresh basil leaves
3 tablespoons extra virgin olive oil
2 tablespoons balsamic glaze
1 teaspoon dried oregano
2–3 cloves garlic, minced
½ teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Instructions
Season chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium heat and cook chicken until golden brown and cooked through (about 15-20 minutes). Remove and let rest before slicing.
Prepare rice according to package instructions for fluffy white or brown rice.
Dice tomatoes and chop basil while the chicken cooks.
