  • 1 Greek marinated chicken breast (8 ounces)
  • 2 cups sliced tomatoes
  • 1 cup sliced Persian cucumber
  • 1/4 cup kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 clove minced garlic
  • 2 teaspoons dried oregano
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Wash and dry all vegetables thoroughly. Chop the lettuce, slice the tomatoes and cucumbers, and set aside.
  2. If using unseasoned chicken, marinate with olive oil, vinegar, minced garlic, oregano, salt, and pepper for at least 30 minutes before cooking.
