  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg (room temperature)
  • Additional granulated sugar and cinnamon for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and 1 teaspoon of cinnamon until combined.
  3. In another bowl, cream softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients, folding gently until just combined.
  6. Scoop dough into balls and roll in a mixture of remaining granulated sugar and cinnamon.
  7. Place on the prepared baking sheet, spacing them at least two inches apart.
