  • 5 ounces fresh spinach
  • 2 cups ricotta cheese
  • 1/4 cup grated pecorino cheese
  • 2 garlic cloves, grated

  • 1 teaspoon lemon zest
  • 2 cups marinara sauce
  • Extra-virgin olive oil (for drizzling)
  • 1/4 teaspoon red pepper flakes
  • 3/4 teaspoon sea salt (plus extra for pasta water)
  • Freshly ground black pepper
  • Chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Cook the jumbo pasta shells in salted boiling water until al dente, then drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant. Add spinach and cook until wilted. Combine this with ricotta, pecorino cheese, oregano, lemon zest, salt, and black pepper in a bowl.
