  • 1 medium zucchini, coarsely grated
  • 2 cups chicken broth
  • 2 tablespoons lemon juice

  • 1 tablespoon chopped fresh parsley (or ½ teaspoon dried)
  • 1 teaspoon chopped fresh oregano (or ½ teaspoon dried)
  • 1 teaspoon chopped fresh thyme (or ¼ teaspoon dried)
  • 1 teaspoon smoked paprika
  • ¾ teaspoon seasoned salt
  • ½ teaspoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon turmeric
  • â…› teaspoon cayenne pepper
  • Tzatziki sauce
  • Pita bread
  • Fresh herbs (dill, basil, parsley, or chives)
  • Fresh lemon

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In the prepared dish, combine diced chicken with lemon juice, olive oil, parsley, oregano, thyme, smoked paprika, cumin, seasoned salt, onion powder, garlic powder, black pepper, turmeric, and cayenne pepper. Mix well and let marinate for at least 30 minutes.
  3. Stir in uncooked rice and grated zucchini into the marinated chicken mixture.
  4. Pour chicken broth over the mixture and gently stir to combine.
  5. Cover tightly with foil and bake for 25 minutes; then check for doneness. Bake longer if needed until liquid is mostly absorbed.
  6. Fluff with a fork before serving and garnish with tzatziki sauce and fresh herbs.
