  • 6 medium potatoes
  • 1 cup full-fat milk (250 ml)
  • 1 cup double cream (250 ml)
  • 1 tbsp plain flour
  • 30 g butter (2 tbsp)
  • 1 cup Cheddar cheese (100 g)
  • 2 tbsp grated parmesan
  • 1 tbsp Dijon mustard
  • 2 cloves of garlic
  • Salt and pepper to taste
  • A pinch of nutmeg

Instructions

  1. Preheat the oven to 200 degrees Celsius (390 Fahrenheit). Melt butter in a saucepan over medium heat, then whisk in flour to create a roux.
  2. Gradually add milk while whisking continuously to avoid lumps. Stir in Cheddar cheese, parmesan, double cream, garlic, mustard, nutmeg, salt, and pepper until smooth.
  3. Thinly slice the washed potatoes and layer them in a greased baking dish, pouring sauce over each layer.
  4. Cover with foil and bake for 60 minutes. Remove foil and increase temperature to 220 degrees Celsius (410 Fahrenheit) for an additional 15 minutes until golden brown.
  5. Let cool slightly before serving.
