  • 2 pounds boneless skinless chicken thighs (or chicken breasts), cut into 1-inch pieces
  • ¼ cup cornstarch
  • 2 tablespoons vegetable oil
  • 3 scallions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup low sodium chicken broth
  • ¼ cup low sodium soy sauce
  • ¼ cup light brown sugar
  • 3 tablespoons apple juice
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon ground ginger

Instructions

  1. Coat the chicken pieces with cornstarch, salt, and pepper in a mixing bowl.
  2. Heat a skillet over medium heat, add oil, and pan-fry the chicken until browned (6-8 minutes). Remove and keep warm.
  3. In the same skillet, add remaining oil; sauté scallions for 30 seconds and garlic for another 20 seconds.
  4. Mix broth, soy sauce, brown sugar, apple juice, vinegar, and ginger in a bowl; pour into the skillet. Simmer for about 3 minutes.
  5. Add the chicken back to the skillet; let it simmer for an additional 5-8 minutes until the sauce thickens.
  6. Garnish as desired and serve over rice or noodles.
