  • 23 pounds boneless beef chuck roast
  • 2 tablespoons olive oil
  • 2 yellow onions
  • 4 garlic cloves
  • 2 dried ancho chiles
  • 1 cup fresh cilantro leaves
  • 8 ounces tomato sauce (or crushed tomatoes)
  • 45 cups beef stock or broth
  • 18 corn tortillas (6 inch)
  • 20 ounces Oaxaca cheese (or mozzarella)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onions until translucent. Add minced garlic and dried ancho chiles; cook until fragrant.
  2. Transfer the mixture to a blender with tomato sauce, cilantro, and spices. Blend until smooth.
  3. Place the beef chuck roast in the slow cooker and pour the blended sauce over it. Add bay leaves and enough beef stock to cover.
  4. Cook on low for about 8 hours until tender. Shred the beef with two forks and return it to the pot with some consomme.
  5. Fill warmed tortillas with shredded beef and cheese, then toast in a skillet until crispy on both sides.
