  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (room temperature)
  • 1 3/4 cups all-purpose flour
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 425°F. Prepare a muffin tin with parchment liners or grease with butter.
  2. In a mixing bowl, combine melted butter and sugar; mix until light and creamy. Add eggs, vanilla, and almond extract; blend until just combined.
  3. Gently mix in the pistachio pudding mix and milk. Gradually add flour, baking powder, and salt until just combined—avoid overmixing.
  4. Fill muffin liners about three-quarters full and sprinkle with chopped pistachios if desired.
  5. Bake for 7 minutes at 425°F; then reduce the heat to 350°F without opening the door and bake for another 8-10 minutes until a toothpick comes out clean.
  6. Let cool slightly before dipping muffin tops in melted butter and rolling in sugar for a sweet finish.
