  • 2 pounds Russet or Yukon Gold potatoes
  • 1/4 cup unsalted butter, divided
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 large egg yolks
  • Fresh chopped chives or parsley, for garnish

Instructions

  1. Peel and chop the potatoes into even pieces. Boil them in salted water until fork-tender, about 15–20 minutes.
  2. Set your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. In separate bowls, melt 2 tablespoons of butter and warm the heavy cream.
  4. Drain cooked potatoes, return them to low heat to evaporate moisture, then mash until smooth.
  5. Mix in melted butter, warm cream, optional Parmesan, salt, pepper, and gently fold in egg yolks.
  6. Using a piping bag fitted with a star tip, pipe mounds onto the prepared baking sheet.
  7. Brush each mound with remaining melted butter and bake for 15–20 minutes until golden brown.
  8. Top with fresh herbs and sea salt before serving warm.
