Ingredients

Scale
  • 10 cups cubed sourdough or French bread
  • 1 large onion, finely diced
  • 2 cups celery, finely chopped (about 34 stalks)
  • 2 tbsp fresh sage, finely chopped
  • 2 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 4 cups low-sodium chicken or vegetable broth
  • ½ cup unsalted butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Cube your choice of bread into bite-sized pieces and let them dry out slightly for about an hour.
  2. In a large skillet over medium heat, melt the unsalted butter. Add the diced onion and chopped celery; sauté until soft and fragrant.
  3. Stir in the fresh herbs and cook for another minute to release their oils.
  4. In a large bowl, combine the bread cubes with the sautéed vegetables and herbs. Gradually pour in the broth while gently mixing until everything is moistened but not soggy.
  5. Transfer the mixture into a greased baking dish, cover with foil, and bake for about 30 minutes. Remove the foil for the last 15 minutes to achieve a crispy top.
