  • 2 cups fresh pistachios (shelled and unsalted)
  • 8 oz dark chocolate (60-70% cocoa)
  • 1 cup heavy cream (or full-fat coconut cream)
  • 1/4 cup sugar (or agave/maple syrup)
  • 1 tsp pure vanilla extract
  • A pinch of salt
  • 1 tbsp vegan gelatin & 2 tbsp water

Instructions

  1. Grind the pistachios in a food processor until they reach a fine powder.
  2. In a saucepan over medium heat, warm the heavy cream, then stir in sugar and salt until dissolved.
  3. Remove from heat and mix in ground pistachios, allowing flavors to meld.
  4. Bloom vegan gelatin by sprinkling it over water; let sit for five minutes, then heat gently until clear.
  5. Combine the bloomed gelatin with the pistachio mixture, stirring well.
  6. Pour into serving glasses and refrigerate for at least four hours to set.
  7. For ganache, melt dark chocolate with remaining heavy cream over low heat until smooth. Allow to cool slightly before drizzling on set mousse.
