  • 6 Tablespoons butter or coconut oil
  • 1/2 cup chocolate chips
  • 1 large egg plus 1 large yolk
  • 1/2 teaspoon vanilla
  • 1/2 cup no-sugar-added applesauce
  • 3/4 cup blanched almond flour
  • 1/2 cup cocoa powder
  • 3 Tablespoons granulated monk fruit sweetener or granulated stevia
  • 1/4 teaspoon salt
  • 1/2 cup coconut cream
  • 1 large egg
  • 2 Tablespoons granulated monk fruit sweetener or granulated stevia
  • 1/4 teaspoon peppermint extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8″ square pan with nonstick spray.
  2. Melt the chocolate chips and butter (or coconut oil) together in a microwave-safe bowl and stir until smooth.
  3. Mix in the egg, yolk, vanilla, and applesauce into the melted chocolate mixture.
  4. In another bowl, whisk together almond flour, cocoa powder, sweetener, and salt before combining it with the wet ingredients.
  5. Pour the batter into the prepared pan and smooth out evenly.
  6. Prepare the peppermint layer by whisking together coconut cream, egg, sweetener, and peppermint extract.
  7. Pour the peppermint mixture over the brownie batter and spread evenly.
  8. Bake for 45-50 minutes or until a toothpick comes out mostly clean.
  9. Chill in the refrigerator before slicing into squares.
