  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • ½ cup gruyere cheese (or more sharp cheddar)
  • ¼ cup grated parmesan
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Layer thinly sliced Yukon Gold potatoes and onion slices in a greased baking dish.
  3. In a saucepan, melt butter over medium heat, whisk in flour, then gradually add almond milk until smooth. Simmer until thickened.
  4. Stir in shredded cheddar cheese, garlic powder, salt, and pepper until melted.
  5. Pour the cheese sauce over the layered potatoes.
  6. Cover with foil and bake for 45 minutes to soften the potatoes.
  7. Remove foil, add gruyere and parmesan on top, then bake uncovered for an additional 30-45 minutes until golden brown.
