  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. In a bowl, combine mayonnaise, sour cream, lime juice and zest, dill, mustard, minced garlic, salt, and pepper to make the dressing. Set aside.
  2. Bring water to boil in a pot; cook shrimp for 2-3 minutes until pink and opaque. Transfer cooked shrimp to an ice water bath for about 3 minutes.
  3. Drain shrimp and mix in a large bowl with diced cucumber and green onions. Add dressing and gently stir until well combined.
