  • 4 flour tortilla wraps
  • 2 seedless cucumbers
  • 1 cup romaine lettuce
  • 2 oz cream cheese, softened
  • 1/2 cup plain Greek yogurt
  • 1/2 cup fresh basil
  • 1/2 cup fresh parsley
  • 1 clove garlic
  • 2 tablespoons lemon juice
  • 1/4 cup milk (or non-dairy alternative)
  • 1/2 teaspoon salt
  • 1/2 cup diced scallions

Instructions

  1. Peel and slice the cucumbers into long sticks.
  2. In a food processor, blend basil, garlic, parsley, lemon juice, salt, milk, Greek yogurt, and scallions until smooth to create the green goddess dressing.
  3. In a mixing bowl, combine softened cream cheese with part of the green goddess dressing until smooth.
  4. Lay a tortilla flat and spread a layer of cream cheese mixture down the center.
  5. Sprinkle grated Parmesan (if using), add romaine lettuce, and cucumber sticks on top.
  6. Roll tightly from the bottom up while folding in the sides to secure filling.
