  • 1 large yellow onion (diced)
  • 1 cup carrots (thinly sliced)
  • ¾ cup celery (diced)
  • 4 tsp garlic (minced)
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans (drained and rinsed)
  • 4 cups low sodium chicken broth
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta (uncooked)

Instructions

  1. In a large skillet over medium heat, cook turkey bacon until crispy; drain and slice.
  2. In your slow cooker, combine onion, carrots, celery, salt, pepper, garlic, tomato paste, crushed tomatoes, beans, chicken broth, and water. Stir well.
  3. Cover and cook on low for 7-8 hours or high for 4-5 hours. About 30 minutes before serving, add the ditalini pasta.
  4. Serve hot with grated Parmesan cheese on top.
