Instructions

  1. In a large bowl, combine buttermilk, hot sauce, garlic powder, onion powder, smoked paprika, ground black pepper, and kosher salt. Whisk until smooth.
  2. Submerge the chicken pieces in the marinade and refrigerate for at least 2 hours or overnight for enhanced flavor.
  3. In another bowl, mix flour with cornstarch and spices: cayenne pepper, oregano, thyme, cumin, and chili powder.
  4. Remove marinated chicken from fridge; let excess buttermilk drip off before dredging in the flour mixture.
  5. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry chicken pieces in batches for 12-15 minutes until golden brown and cooked through (165°F internal temperature).
  6. Drain on a wire rack or paper towels before serving.
