  • 2 (6 oz) chicken breasts, cut into cutlets
  • 2 cups seasoned panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon granulated garlic
  • 1 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 23 large eggs
  • Olive oil cooking spray
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • Chopped basil and parsley for garnish

Instructions

  1. Preheat your air fryer to 390° F.
  2. In one bowl, mix the panko breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, chili powder, salt, and pepper. In another bowl, whisk the eggs with salt and pepper.
  3. Dry each chicken cutlet and first dip it in the egg mixture, shaking off excess before coating it in the breadcrumb mixture.
  4. Spray the air fryer basket with olive oil and arrange the chicken in a single layer. Spray lightly on top.
  5. Cook for 5 minutes, flip the chicken, spray again, and cook for an additional 5 minutes.
  6. Spread tomato sauce over each piece, top with mozzarella cheese, and cook for another 2 minutes until melted.
