  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 16 ounces cheese tortellini (fresh or frozen)
  • 4 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and sauté for about 5–7 minutes until tender.
  2. Stir in minced garlic, dried thyme, salt, and pepper; cook for an additional minute until fragrant.
  3. Pour in the vegetable broth and heavy cream, allowing to simmer gently for 3–5 minutes.
  4. Add the cheese tortellini to the skillet; cover and cook for 8–10 minutes until tender.
  5. Stir in fresh spinach and cook for another 2 minutes until wilted.
  6. Remove from heat and mix in grated Parmesan cheese until melted.
