  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk/half and half)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F and grease a medium-sized baking dish.
  2. Slice the Yukon gold potatoes thinly (about 1/16th of an inch) for even cooking.
  3. In a pot over medium heat, melt butter and sauté minced garlic until fragrant. Stir in flour to create a roux.
  4. Gradually add heavy cream, stirring until thickened. Mix in Parmesan cheese (if using), thyme, salt, and pepper.
  5. Toss sliced potatoes in the creamy sauce until well-coated.
  6. Layer potato slices upright in the baking dish and pour any remaining sauce on top.
  7. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 30 minutes until golden brown.
