Instructions

  1. Preheat oven to 400°F (200°C) and line muffin pan with liners.
  2. In a bowl, whisk together flour, sugar, and cinnamon for the streusel topping; mix in melted butter until crumbly. Chill in the fridge.
  3. In another bowl, combine flour, baking powder, and salt.
  4. Whisk egg, orange zest, and sugar until pale; add Greek yogurt, orange juice, and canola oil.
  5. Fold wet ingredients into dry ingredients gently until just combined; coat cranberries lightly in flour and fold in.
  6. Fill muffin liners two-thirds full, top with streusel mixture and reserved cranberries.
  7. Bake at 375°F (190°C) for 18-20 minutes or until a toothpick comes out clean.
