  • 1 tbsp olive oil
  • 1/2 cup finely chopped onion
  • Diced mushroom stems
  • 2 garlic cloves
  • 4 oz crab meat (claw or lump)
  • 4 oz cream cheese (softened)
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp minced fresh parsley
  • 1 tbsp minced chives
  • Salt
  • Black pepper
  • 1/4 cup fresh grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 375°F.
  2. Rinse mushrooms under cold water; pat dry and remove stems, saving them for the filling.
  3. Sauté diced mushroom stems and onion in olive oil until caramelized; add garlic towards the end.
  4. In a bowl, combine sautéed veggies with crab meat, cream cheese, egg, bread crumbs, Parmesan cheese, parsley, chives, salt, and pepper.
