¾ cup cucumber (chopped)
¾ cup cherry tomatoes (halved)
2 tablespoons red onion (diced)
1 cup cottage cheese
½ – 1 tablespoon white grape juice vinegar
Drizzle of extra virgin olive oil
Fresh herbs (dill or parsley) for garnish
Instructions
In a medium bowl, combine chopped cucumbers, halved cherry tomatoes, and diced red onion. Season with salt and cracked pepper to taste.
In another bowl, mix cottage cheese with white grape juice vinegar until well combined.
Using a slotted spoon, layer the veggie mixture over the cottage cheese blend, allowing excess liquid to drain off.
