- 1 tablespoon butter
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 2 to 3 celery sticks, chopped
- 2 to 3 garlic cloves, minced
- 1/2 tablespoon chopped fresh rosemary
- 1/2 tablespoon chopped fresh thyme
- 1 pound chicken breast
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 1/2 pounds potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup low-fat cheddar cheese
- A handful of roughly chopped fresh parsley
- Salt and freshly ground black pepper to taste
- In a large pot, heat olive oil and butter over medium heat. Add chopped onion, carrots, and celery; sauté for about 5 minutes until softened.
- Stir in minced garlic, rosemary, and thyme; cook for another minute.
- Add chicken breast whole, season with salt and pepper, and brown on all sides for about 5-7 minutes.
- Sprinkle flour over the mixture and stir well. Gradually pour in milk while stirring to prevent lumps.
- Add chicken broth and cubed potatoes; bring to a boil then reduce heat to simmer for 25 minutes until potatoes are tender.
- Shred the chicken using two forks, return it to the pot along with cheddar cheese, stirring until melted. Serve hot topped with fresh parsley.
