  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 to 3 celery sticks, chopped
  • 2 to 3 garlic cloves, minced
  • 1/2 tablespoon chopped fresh rosemary
  • 1/2 tablespoon chopped fresh thyme
  • 1 pound chicken breast
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 1/2 pounds potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup low-fat cheddar cheese
  • A handful of roughly chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add chopped onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic, rosemary, and thyme; cook for another minute.
  3. Add chicken breast whole, season with salt and pepper, and brown on all sides for about 5-7 minutes.
  4. Sprinkle flour over the mixture and stir well. Gradually pour in milk while stirring to prevent lumps.
  5. Add chicken broth and cubed potatoes; bring to a boil then reduce heat to simmer for 25 minutes until potatoes are tender.
  6. Shred the chicken using two forks, return it to the pot along with cheddar cheese, stirring until melted. Serve hot topped with fresh parsley.
