  • 300 grams broccoli (cut into small florets)
  • 200 grams halloumi (cubed)
  • 1 tablespoon olive oil (for frying)
  • 1 fennel (sliced thinly)
  • 2 tablespoons olives (sliced into rings)
  • 2 tablespoons roasted red peppers (cut into strips)
  • 2 tablespoons toasted pine nuts
  • 2 spring onions (sliced into rings)

Instructions

  1. Boil water in a large pot, add pasta, and cook according to package instructions until al dente. Drain and set aside.
  2. In a pan over medium heat, add olive oil. Sauté sliced fennel and broccoli until tender yet crisp.
  3. In another pan, fry cubed halloumi until golden brown on all sides.
  4. In a large bowl, combine cooked pasta, sautéed vegetables, fried halloumi, olives, roasted red peppers, toasted pine nuts, and spring onions. Drizzle with pesto and toss gently.
  5. Serve warm or chilled, garnished with fresh basil.
