  • 1/4 cup reserved potato cooking water
  • Salt and freshly cracked black pepper (to taste)
  • 14 oz cabbage (about 1/2 medium head)
  • 2 large leeks, sliced
  • 1/3 cup diced scallions (for topping)

  1. Peel and quarter the potatoes. Boil in salted water until fork-tender, about 15 minutes. Drain, reserving some cooking water.

  3. Mash the drained potatoes in a pot with remaining butter and milk until creamy. Adjust consistency with reserved cooking water if necessary.
