  • ¾ cup water
  • 3 ½ cups all-purpose flour

  • 2 teaspoon instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 tsp instant coffee granules
  • 1 large egg (room temperature)
  • ½ tsp vanilla extract
  • Tangzhong (from recipe above)
  • 4 tablespoon unsalted butter (room temperature)
  • 5 tbsp unsalted butter (room temperature)
  • â…” cup dark brown sugar (or light brown sugar)
  • 2 tsp ground cinnamon
  • 1 ½ tsp instant coffee granules
  • 2 oz cream cheese (softened)
  • 4 tbsp unsalted butter (softened)
  • 1 cup powdered sugar
  • 4 tbsp heavy cream
  • ¾ tsp instant coffee granules

Instructions

  1. Prepare the tangzhong by whisking together water and flour in a saucepan over medium heat until it forms a paste-like consistency. Set aside.
  2. In a mixing bowl, combine remaining flour, sugar, yeast, and salt.
  3. Warm milk slightly and mix in instant coffee. Add this mixture along with an egg, vanilla extract, and tangzhong into dry ingredients. Knead until shaggy dough forms.
  4. Gradually add softened butter while kneading until incorporated.
  5. Knead until the dough is smooth and elastic (about 8-10 minutes).
  6. Let the dough rise in a warm spot until doubled in size (45-60 minutes).
  7. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and instant coffee.
  8. Roll out the dough into a rectangle and spread the filling evenly.
  9. Cut into strips, roll tightly, and place in a baking pan for another rise (45-60 minutes).
  10. Bake at 325°F (163°C) for 20-23 minutes until golden brown.
  11. Cool on wire rack while preparing frosting by mixing cream cheese, butter, powdered sugar, heavy cream, and instant coffee until smooth.
  12. Frost cooled rolls generously and enjoy!
