  • 1 tsp vanilla extract
  • 1/2 cup brown sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix milk, eggs, melted butter, and vanilla until smooth.
  4. Gently fold the wet ingredients into the dry until just combined; don’t overmix.
  5. For the filling, combine brown sugar and additional cinnamon in a small bowl.
  6. Spoon half of the batter into muffin cups, sprinkle with cinnamon filling, then top with remaining batter.
  7. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
