Ingredients

Scale
  • 1.5 pounds flank steak or sirloin
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic (minced)
  • 1/2 cup fresh cilantro (chopped)
  • 3 cups cooked white rice
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (charred)
  • 1 large avocado (sliced)
  • Cherry tomatoes (halved)
  • Shredded cheese (optional)

Instructions

  1. Marinate the steak: In a mixing bowl, combine lime juice, olive oil, garlic, cilantro, cumin, chili powder, salt, black pepper, and smoked paprika. Add the steak and coat well. Refrigerate for at least 30 minutes or up to 24 hours.
  2. Cook rice: Prepare white rice according to package instructions. Stir in lime juice, chopped cilantro, and salt once cooked.
  3. Warm beans: Heat black beans in a saucepan over medium-low heat until warmed through.
  4. Char corn: Sauté corn in a skillet until slightly blistered for added sweetness.
  5. Sear steak: Remove from marinade and pat dry. Sear in a hot skillet until golden brown and cooked to desired doneness. Let rest before slicing against the grain.
  6. Build bowls: Serve rice as a base topped with sliced steak, warmed beans, charred corn, avocado slices, cherry tomatoes, and cheese if desired.
