  • 1 1/4 pounds boneless skinless chicken thighs
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 3 tablespoons fresh cilantro (finely diced)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ripe avocados (cubed)
  • 1/3 cup cilantro (finely diced) (for salsa)
  • 1/4 cup red onion (diced)
  • 2 tablespoons lime juice (for salsa)
  • 1/2 teaspoon salt (for salsa)
  • 2 cups cooked cilantro lime rice
  • 1 can black beans (drained and rinsed)
  • 1 1/2 cups corn (fresh or frozen)
  • 1/2 cup plain Greek yogurt
  • 2 chipotle peppers in adobo + 1–2 tablespoons adobo sauce (for sauce)
  • 1 tablespoon fresh lime juice (for sauce)
  • 1/2 teaspoon salt (for sauce)
  • 1/4 teaspoon garlic powder (for sauce)

Instructions

  1. Whisk together lime juice, olive oil, honey, paprika, garlic powder, salt, and pepper in a bowl to create the marinade. Add chicken thighs and coat well. Marinate for at least 30 minutes.
  2. Cook the marinated chicken thighs in an oven preheated to 400°F for about 20-25 minutes or until they reach an internal temperature of 165°F.
  3. While the chicken cooks, prepare the avocado salsa by mixing together cubed avocados, diced red onion, cilantro, lime juice, and salt in a separate bowl.
  4. Assemble bowls by layering cilantro lime rice on the bottom, adding black beans and corn followed by sliced chicken and avocado salsa on top.
  5. Drizzle with chipotle sauce made by blending Greek yogurt with chipotle peppers and adobo sauce until smooth.
