  • 1/2 cup cocoa powder (Dutch process)
  • 3/4 cup unsalted butter
  • 3/4 cup light brown sugar
  • 2 egg yolks
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  3. In another bowl, cream together the softened butter and sugars until fluffy.
  4. Add egg yolks and vanilla; mix until combined.
  5. Gradually incorporate the dry ingredients into the wet mixture without overmixing.
  6. Scoop out dough onto prepared sheets and create indentations with your thumb.
  7. Bake for about 10 minutes; cool on racks.
  8. Meanwhile, heat cream until it simmers; pour over chocolate chips and stir until smooth.
  9. Fill cooled cookie indentations with ganache and optionally sprinkle with nonpareils.
