  • 150 g granulated sugar
  • 1/4 tsp kosher salt
  • 1/2 tsp vanilla bean paste or extract
  • 113 g dark chocolate
  • 1/2 tsp neutral oil

Instructions

  1. Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
  2. In a clean mixing bowl, whip egg whites and salt until soft peaks form.
  3. Gradually add sugar while continuing to beat until stiff peaks form and the mixture is glossy.
  4. Gently fold in the vanilla bean paste or extract.
  5. Transfer the meringue into a piping bag and pipe small dollops onto prepared baking sheets.
  6. Bake for about 120 minutes until dry, then turn off the oven and leave them inside to cool completely.
  7. Melt the finely chopped dark chocolate with neutral oil until smooth.
  8. Dip half of each cooled cookie into the melted chocolate and place back on parchment paper until set.
