  • 570 g all-purpose flour
  • 30 g unsweetened cocoa powder
  • 113 g unsalted butter (softened) (for filling)
  • 200 g brown sugar
  • 2 tsp ground cinnamon
  • 2 tbsp unsweetened cocoa powder (for filling)
  • 50 g semi-sweet chocolate (finely chopped or mini chips)
  • 225 g cream cheese (room temperature)
  • 60 g unsalted butter (room temperature) (for frosting)
  • 240 g powdered sugar (sifted)
  • 1 tsp ground cinnamon (for frosting)
  • 2 tsp instant espresso powder (dissolved in 1 tbsp milk)
  • Pinch of salt

Instructions

  1. In a stand mixer bowl, combine warm milk, instant yeast, and granulated sugar. Let it sit for 5 minutes until foamy.
  2. Mix in eggs, softened butter, and salt. Gradually add flour and cocoa powder while kneading until smooth.
  3. Allow dough to rise in a greased bowl for 1.5 hours until doubled in size.
  4. Prepare the filling by mixing softened butter, brown sugar, cocoa powder, and cinnamon.
  5. Roll out the dough into a rectangle, spread the filling on top, sprinkle chopped chocolate, and roll tightly into a log.
  6. Cut into rolls and place in a greased baking pan. Let rise for 30 minutes before baking at 350°F (175°C) for 25-30 minutes.
  7. For icing, beat cream cheese and softened butter until smooth; gradually add powdered sugar, cinnamon, and espresso powder.
