  • 5 large eggs (at room temperature)
  • 2 cups all-purpose flour
  • 1 1/4 cups Dutch-processed cocoa powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 3/4 teaspoon ground cinnamon (for topping)
  • 1/2 teaspoon Dutch-processed cocoa powder (for topping)
  • pinch ground cloves
  • pinch ground ginger

Instructions

  1. Preheat the oven to 350ºF and line two 9×5-inch loaf pans with parchment paper.
  2. Cream together unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time.
  3. In a separate bowl, sift together flour, cocoa powder, ground cinnamon, salt, baking powder, and baking soda.
  4. Whisk buttermilk, water, and vanilla extract in another bowl.
  5. Gradually combine dry ingredients with wet ingredients using low speed on your mixer until just incorporated.
  6. Pour batter evenly into prepared pans. Mix topping ingredients (sugar, cinnamon, cocoa powder) and sprinkle on top.
  7. Bake for 45–55 minutes or until a toothpick comes out clean. Let cool before slicing.
