  • 1 chipotle pepper in adobo sauce, finely chopped

  • ½ tsp Dijon mustard
  • 1 tsp honey
  • 1 tsp kosher salt
  • ½ tsp freshly cracked black pepper
  • 1 chicken breast (sliced in half horizontally)
  • 4 slices turkey bacon (cooked until crisp)
  • 4 slices sharp cheddar cheese
  • 1 beefsteak tomato (sliced into rounds)
  • 4 slices sturdy bread (French, focaccia, or sourdough)
  • Softened butter (for grilling)

Instructions

  1. In a mixing bowl, whisk together the egg yolk, Dijon mustard, lime juice, honey, salt, and pepper until smooth. Gradually drizzle in the oil while whisking to create a creamy mayo. Stir in smoked paprika and chopped chipotle pepper.
  2. Season the chicken breast with salt and pepper. Grill over medium heat for about 4–5 minutes per side until cooked through and juices run clear. Let rest before slicing.
  3. Butter one side of each slice of bread generously. Spread chipotle mayo on the unbuttered side of each slice.
  4. Layer cheese, sliced chicken, crispy bacon, tomato slices on top of one slice of bread; finish with another slice of bread (mayo side facing inward).
  5. Grill on medium heat or in a panini press until golden brown on both sides and cheese is melted—about 3–5 minutes per side.
